I can make almost any fruit into a curd center. Some favorites are raspberry, key lime, lemon, pineapple, strawberry, and sour cherry.
There are several buttercreams to choose from: American, Swiss Meringue, French, Italian Meringue, and German. Buttercreams can be flavored with almost any flavoring.
Ganache makes a smooth creamy filling and come in several flavors: dark chocolate, milk chocolate, and white chocolate (which can have more flavors added)
Caramels, marshmallows, nugget, and dulce de leches all make great center fillings as well.
